How to Make Mexican Flan With Ancho Chili

Mexican flan is one of the most famous Mexican dessert recipes and it comes in many varieties. Plain Mexican flan is subtly flavored with vanilla but you can also get other varieties including coconut, chocolate, coffee, and even chili flavored flan.

This creamy, luxurious custard with its sweet caramel sauce is a wonderful way to finish dinner and if you have never made Mexican flan before you will find it quite easy. Flan is perhaps the most popular Mexican dessert recipe and homemade flan is truly mouthwatering.

Mexican Flan with Ancho Chili Recipe

The following recipe has a kick, thanks to the addition of ancho chilies, and this recipe contains whole milk, evaporated milk, and condensed milk, which is unusual but does give the flan an incredibly sweet and creamy flavor to contrast with the chilies. This recipe feeds eight people.

What you will need:

8 eggs
4 egg yolks
3 chopped, dried ancho chilies, veins, and seeds removed
1 cup dark brown sugar
2 cups whole milk
2 cups sweetened condensed milk
2 cups evaporated milk
2 teaspoons vanilla extract
1 cup white sugar
1/2 cup water
1 3/4 cups orange juice
4 tablespoons grated orange zest
1 teaspoon cornstarch dissolved in 1/4 cup water

How to make it:

Put the white sugar in a skillet with the water and stir it over a moderate heat until the sugar dissolves. Allow the liquid to boil down and turn to syrup. Pour the syrup into an eight cup flan mold and tip it so it coats the whole base and the sides. Let it set. Preheat the oven to 350 degrees F. Bring a pan of water to a boil.

Beat the egg yolks and eggs and add all the milks. Stir in the vanilla and 3/4 cup of the orange juice, and then stir in half the brown sugar until it dissolves. Fold in two of the chopped chilies and pour this mixture into the flan mold. Put the mold in a baking pan on the middle oven rack and pour the boiling water into the pan so it comes one or two inches up the mold.

Bake the flan for an hour and a half to two hours, or until a toothpick inserted in the middle comes out clean. You might need to add more hot water to the baking pan. Take the flan out of the oven and let it cool for an hour.

Refrigerate it overnight or for at least eight hours, covered. Mix the remaining orange juice with the remaining brown sugar and the rest of the chili in a food processor or blender, then pour the mixture into a pan and bring it to a boil. Let it simmer for ten minutes, and then stir in the orange zest. Take the pan off the heat and stir in the cornstarch. Let the sauce cool. Invert the flan on to a serving plate and serve the sauce drizzled on top.
